Brewing is the production of beer by steeping a starch source (commonly cereal grains, the most popular of which is barley) in water and fermenting the resulting sweet liquid with yeast. It may be done in a brewery by a commercial brewer, at home by a homebrewer, or by a variety of traditional methods such as communally by the indigenous peoples in Brazil when making cauim. Brewing has taken place since around the 6th millennium BC, and archaeological evidence suggests that emerging civilizations including ancient Egypt and Mesopotamia brewed beer. Since the nineteenth century the brewing industry has been part of most western economies.
The basic ingredients of beer are water and a fermentable starch source such as malted barley. Most beer is fermented with a brewer's yeast and flavoured with hops.Less widely used starch sources include milletsorghum and cassava. Secondary sources (adjuncts), such as maize (corn), rice, or sugar, may also be used, sometimes to reduce cost, or to add a feature, such as adding wheat to aid in retaining the foamy head of the beer. The proportion of each starch source in a beer recipe is collectively called the grain bill.
Steps in the brewing process include maltingmillingmashinglauteringboilingfermentingconditioningfiltering, and packaging. There are three main fermentation methods, warmcool and spontaneous. Fermentation may take place in an open or closed fermenting vessel; a secondary fermentation may also occur in the cask or bottle. ...1882Oct... Koehler and Lange Brewery of Davenport filed a lawsuit against John Hill. Koehler and Lange had delivered to Hill an amount of beer.
.....Hill maintained that beer was not legal under the constitution (the new 1882 amendment) and he could not be forced to pay for an illegal product John Hill was the proprietor of the restaurant and saloon at Turner Hall in Davenport.
..... Koehler and Lange contended that the amendment was not passed in the same form in both sessions of the legislature, so the amendment was not valid.
.....The real reason for the lawsuit was to get a ruling on this issue. The case was heard in district court and ruled that the amendment was not valid, therefore the court ordered payment.
..1882Dec...The case was appealed to the Supreme Court of Iowa and was argued in Davenport.
..1883Jan18...The Supreme Court ruled 5 to 1, upholding the ruling of the District Court  court, thus voiding the 1882 Prohibition Amendment.
...1883...The Iowa temperance forces in the Legislature did not pass another prohibitory amendment to the constitution until the next Iowa general assembly.

..... Prohibition was now the law of the State of Iowa.  Enforcement of prohibition was another matter. In the large cities enforcement was difficult or non-existent.
......In Dubuque and Sioux City the law was ignored.
.....Council Bluffs passed an ordinance that any saloon operating in the city would be fined $50 per month, ($600 per year).
.....The city council of Sioux City rejected a similar ordinance because “it would provide no protection to the saloonkeepers.”
.....In Davenport, Burlington, and Keokuk instead of ordering “beer” a customer would order “mum.”
.....In Clinton the saloons served “hopinine.”
.....In Des Moines, “while the saloons are apparently closed, two carloads of beer are received and sold daily in Des Moines.” 
.....The Des Moines Tribune would later reported:  Under the prohibitory law the state experienced a reign of terror. Bootlegging was common; “blind pigs” and holes in the wall flourished on every hand; official outrages of various kinds were committed; murders growing out of attempted enforcement of the law were numerous; shrewd justices of  the peace and constables waxed rich from outrageous prosecutions; private homes were invaded by alleged officers, and conditions assumed the status of a rebellion.
 
MULCT ACT of 1884
...1889...Largely because of the party’s position on prohibition, the Republican Party of Iowa lost the Gubernatorial elections in 1889 and 1891 and was in danger of losing control of the legislature.
.....Because of political pressures and the difficulty of enforcing the prohibition law of 1884, where the population did not support it, the Republican Party of Iowa changed its position on prohibition.
..1893...The Iowa Republican platform was changed to, “prohibition was never said to be a real test of republicanism.” On a national basis it had varied by state.
 
...1894...The Iowa legislature passed the Mulct Act, a law providing in effect the local option to allow saloons.
.....The 1884 Prohibitory law was not repealed, but would be violated upon consent of a certain percent of the people of a given community and the payment of a certain sum of money.
......Under the Mulct law was that the prospective saloonkeeper would circulate a petition and get a certain number of signatures approving his operating the saloon. The Mulct law also set a number of other operating restrictions.
......Enforcement of the Mulct law was local. Any citizen could file a civil case against a saloon violating conditions of the act and get injunctive relief closing the saloon as a nuisance or setting conditions on its continued operation.

...1904July04, West.Union.IA paper:  Sat. night Ernest Pfeiffer while pumping up the gasoline plant in the basement of Pfeiffer Bros. drug store in Oelwein had a close call.  The tanks were supposed to stand 60lbs of pressure, but the lower end of the tank blew out at 45lbs.  The explosion cause the tank to bound upward, striking Mr. Pfeiffer in the face and breast, knocking him several feet where he fell unconscious.  He was saturated with gasoline from head to foot, and had there been a lamp near, his fate would have been death.  The nearest lamp was 30ft away.  Will Pfeiffer, hearing the explosion of the tank and suspecting the cause, had the presence of mind to remove the lamp to the front of the store before descending to his brother's assistance.  Will found Earnest's unconscious with his face covered with blood from cuts.  He also received severe bruises.  It was also a close call for the building.  With the air full of gas vapor and gasoline all over the basement, a spark would have ended Earnest & Will life and the building would have gone up in smoke, especially when one considers the paints, oils and other inflammable material of a drug store.  The ends and pipes of the wrecked light plant tank had been soldered rather than riveted, which was not sufficient to withstand 45lbs of pressure.  Those using gasoline lighting plants should examine them to see if they are soldered or glued together.  They need to be riveted.  It might save a life and a building.

F. & Lida Mettler Pfeiffer, south of Fayette on the old Lamb farm, was born in Oelwein 1908May30 and died at the farm home Sunday night 1920Oct31, from scarlet fever.  He had not appeared to be alarmingly ill.  The disease was recognized and the house had been  under quarantine.  It is probably the heart had been weakened, and then came the unexpected collapse.  His teacher says, " he was just a grand fellow, the finest kind of a boy."   Wm. leaved his parents, 2 brothers, 4 sisters.  The private funeral was held at the home, conducted by Rev. Daniel M. Parker of Fayette.  The bearers were his schoolmates, Richard Clotheir, Alva Felkey, Dewitt Chittenden, Theodore Welch, Lowell Pinch/Finch, Austin Earl.

Pfeiffer farm arrived at Taylor, Marion.Co.MO, from Elgin.IA with their s/laws Will Butikofer & Eli Sutter and their families, and have taken possession of the farm.  Rev. Grimm is a minister of the Apostolic Christian church, sometimes known as Dunkards, of which there is a small settlement of 7 families around Taylor.MO.  Other families from KS, IL & IA are expected to move to the Taylor area.  Mr. Grimm & Mr. Butikofer expect to engate in the dairy and baby chick business.  Mr. Sutter will move to Quincy.IL, later.

...1932Sept07,  West.Union.IA paper:  Out of the Way Scenes, Some of the Country's Best;  There are many fine specimens of scenery in Fayette County, if they are accessible or not.  Dr. Daniel Parker, brother of Dr. Charles C. Parker knows many of them.  Some of the finest are in NW Fairfield.Twp and SW Illyria.Twp, along the Brush Creek Canyon.  The general location is near the junction of Bear Creek and Brush Creek in Sec's 8&9 of Fairfield.Twp, on the farm of Arthur Humphrey and the former Zach David Thompson farm.  Dr. Parker invited some conservation politicians to go see some of these places.  The party had the advantage of the presence of Mr/Mrs. Wm.F. Pfeiffer, whose knowledge of botany is extensive and intensive, and who also are familiar with all other forms of outdoor life.  Some of the places are the Balanced Rick, Blue Slate gulch, Parker's canyon, a group of 20 supposed Indian mounds.  References to the Pfeiffer's brings to mind their remarkable home place SW of Fayette, where a tract of some 28 acres abounds in fine native timber and almost every form of native growth of shrubs and vine has been utilized for a sightly building lot with a rarely beautiful natural park in the rear.  On the Pfeiffer farm, just across the road to the south is the old Alexander mansion, connected to so many ways with the high spots of the earliest history of the Fayette county.  Another item of interest at the Pfeiffer home is a thrifty chestnut tree, a variety very rare in  Fayette County.
.....Balanced rock is on the Arthur Humphrey farm in Sec 8, Fairfield.Twp, close to Bear Creek.
.....The supposed Indian mounds, about 20 of the, are on the former Z.D. Thompson farm in Sec 9, Fairfield.Twp.  On the road in to them there will be found on the Nus estate land the densest timber tract.  The mounds and Balanced rock are within a mile apart, visible from each other on the landscape, but miles apart by roads. 
.....Blue Slate gulch is in the NE1/4 of Sec 32, Illyria.Twp, reached by going to the Keefer home, walking a 1/2mi.  Climbing up the canyon at the top a large flat rock dubbed by Mrs. King " Inspiration point."  Dr. Parker and Mr. Pfeiffer said they had never seen the gulch when water was not flowing down the rocks, even in the drouthy years of 1930/31.

Pfeiffer of New York, and together sail for South America.  They expect to remain about 2 months, making it a combined business and pleasure trip.  South America is one of the promising fields for the industires of the U.W., and a beg concern headed by Gus Pfeiffer is constantly branching out for larger fields.  They already are well represented in many European countries.  Wm. & Earnest have been contemplating this as a pleasure and educational trip for some time.

Pfeiffer, 81, multimillionaire son of a pioneer Cedar.Falls.IA family, died at his Summer home at Norwalk.CT, Sat. evening.  Gus is survived by one brother, Ernest Pfeiffer of Pasadena.CA.  Leonard Pfeiffer, 1715 Schreiber.ST, is a nephew and only blood relative living in Cedar.Falls.  Gus was the former head of the Richard Hudnut Co. and chairman of the board of the William R. Warner Drug Co.  He was born in Cedar.Falls in 1872, the son of Henry and Barbara Pfeiffer.  Gus was widely known in the drug and cosmetic fields.  In his earlier years he was head of the Pfeiffer Drug Co. of Cedar.Falls, still operating at 303 Main.St, and now under the ownership of Leo Dunbar and Gorege & John Geertsen.  Widely known as a philanthropist, Gus and his late wife established the Gustavus and Louise Foundation in NY for the study of medicine and pharmacy.  Gus and his brother Henry, made many gifts to Iowa institutions including several local benefactions, to include the Western Old Peoples Home, Washington Park, an organ to the Evangelical U.B. Church, where Gus retained his membership throughout his life, the Cedar Falls Woman's Club, plus others.  With is wife, he made many benefactions of which there is no record here, including Cornell College and other schools and churches.  Gus was a high school classmate of Jack B. Newman, local attorney in Cedar.Falls public schools, and earlier of Ben Hieber when Gus and Ben were attending rural school west of Cedar.Falls (Fredsville area, Grundy.Co.IA).

...The late Henry Pfeiffer, whose death occurred 1893Nov06 (error, death 1903Nov06, bz/2018), at this home in Cedar Falls, Iowa, was long one of the prominent business men of Black Hawk County, identified first as a brewer, and later as a farmer. 
...1830...Mr. Pfeiffer was bron in  Bavaria, Germany on January 14, 1830, and was a son of Lenhardt Pfeiffer, who owned and operated large breweries in Bavaria.
...1853...Henry came to America in 1853, and immediately engaged in the brewing business in Lewistown, Mifflen.Co.PA.
...1856...When he had established his brewery, he returned to Germany to marry, and came back to continue his brewing business in PA for another year.
...1857...He removed to Dubuque.IA,  there conducted a brewery for one year.
...1858...He removed to Cedar.Falls.IA.  In Cedar Falls, he operated the first and only brewery from 1858 until a change in the Iowa State laws (1880+/-) made it out of the question to continue the brewing business longer. 
.....During the whole time he was in business in Cedar.Falls, he was regarded as an upright, honorable man and was respected by all who had dealings with him. 
.....After closing his  brewery, Mr. Pfeiffer retired to a farm (10mi SW of Cedar.Falls, near Fredsville, Grundy.Co.IA) which he successfully cultivated for 10 years, and then retired from active effort. 
.....His fortune, well invested, yielded a large income, and his last years were spent in its enjoyment in his beautiful home in Cedar.Falls.
.....Mr. Pfeiffer was noted for his good citizenship and for his benevolent disposition.  He gave largely in charity and was liberal to all in need. 
.....Fraternally, he belonged to two orders---the Independent Order of Odd Fellows and the Ancient Order of United Workman. 
.....Politically he was a Democrat. 
.....His death was a loss to this city, and he left many who will long recall him with feelings of regard. 
.....Mr. Pfeiffer was married 1856Apr03, in Germany to Barbara Kloftinger, who was a daughter of Marcus Kloftinger, a  prominent hotel keeper in Germany. 
.....A large family were born to them, all of whom survive; all except one are married, and all are well established in life.
.....Jacob H., is an enterprising business man of Cedar Falls, who built and owns the Arlington Hotel, has other large real estate interests, and conducts a drug and jewelry store.
.....Henry, Gustaf A., and Paul M., wholesale druggists of St.Louis.
.....Ernest and William, druggists of Oelwein.IA.
.....Lenhardt, a farmer (on part of father's farm 10mi SW of Cedar.Falls in Gurndy.Co.IA.

Henry Pfeiffer Jr. was born March 3, 1857
...Henry Pfeiffer Jr,  was the oldest of ten children born to Heinrich 'Henry' and Barbara Kluftinger Pfeiffer, German immigrants.
...He was born in Lewiston, Mifflin.Co.PA, but the Pfeiffers moved to Cedar Falls, Iowa soon after his birth.
...He received his early education in the Cedar Falls public schools and later attended North Central College, Naperville, Illinois.
....While a young man he became a clerk in a retail drugstore in Cedar Falls and later opened his own drugstore there.
...His business successes led him to found the Pfeiffer Chemical Company, and gain control of both William R. Warner and Company, and Richard Hudnut Company.
...His brother Gustavus was a business partner.
...Henry Pfeiffer married Annie Merner in 1882.
...They lived modestly and never had children. Instead they devoted time and money to philanthropic enterprises under the auspices of the Methodist Episcopal Church.
...Upon his death Henry Pfeiffer left the greater part of his estate to a group of religious, educational, scientific, and similar institutions, after making generous provisions to a number of relations.
...Henry Pfeiffer died at his home in New York on April 13, 1939.
...On March 1, 1942, Washington Hall and the Henry Pfeiffer Chapel were dedicated. Henry Pfeiffer left in his will that any church-related college that would like to have a chapel built would be able to do so. The most well known of these is the Frank Lloyd Wright designed Annie Merner Pfeiffer Chapel at Florida Southern in Lakeland, Florida.

...Among those who were on hand for the dedicated services were: Annie Merner Pfeiffer, wife of Henry, Ida Haslup Goode, National President of the Woman's Home Missionary Society of the Methodist Episcopal Church, North, Muriel Day, officer of the Woman's Home Missionary Society of the Methodist Episcopal Church, North, Garfield D. Merner, whose name is on both the Merner Center and the Merner Gym and Blanche Merner James for whom the James Center was named for.
